The Derwent Distillery is a small family owned business set up by Robbie and Emma Gilligan, on the banks of the Derwent River (Timtumili Minanya) in Dromedary Tasmania. Robbie hails from Glasgow, Scotland and Emma is a home grown Tasmanian. The name Derwent Distillery comes from one of the first legalised distilleries in Tasmania, originally set up on the banks of the Hobart Rivulet in South Hobart. Unfortunately the distillery was never given the time to shine and in 1838 their doors shut. Emma and Robbie have chosen to resurrect the name and create a blend of old and new, suitably distilling on an acreage which sits on the banks of the River Derwent.


We acknowledge the Palawa people of Lutruwita who are the traditional custodians of the land in which the Derwent Distillery is located. We pay our deep respects to Elders past, present and emerging.

Our distillery is being built on the banks of the River Derwent (Timtumili Minanya), in the small rural town of Dromedary. Dromedary is half an hour from Hobart and only a short drive from the heritage town of New Norfolk. It is nestled between Mount Dromedary and the Dromedary Forest Reserve. Mount Dromedary received its name from Captain John Hayes in 1794. As Captain Hayes sailed up the Derwent River, the ridge of the mountain reminded him of the back of a dromedary camel.

In an area of such natural beauty we have decided to design our distillery completely off-grid, reducing our impact on the environment. We always aim to choose ethically sourced, local and sustainable materials where possible.


While searching for the perfect distillery location we have been laying down a special selection of rare and unique, one off casks since 2016. Robbie distilled the spirit at Old Kempton Distillery and now they have over 40 barrels of Tasmanian Single Malt Whisky maturing which will be released over the next few years. We also make Little Gin Co, Tasmanian ready to drink gin and tonics. Made using Tasmanian tonic, created using Cinchona bark, Tasmanian Pepperberry, lemon and lime juice, cane sugar and Tasmanian mountain water. We created a gin that cut through the tonic, a gin that you can really taste. A drink that captures the essence of Tassie, designed to be drunk straight from the bottle, no mixing or garnishes required.
